Ernest T. Vasquez Sr., a cherished husband, father, grandfather, and great-grandfather, passed away peacefully at his home in Central Heights, AZ on July 30, 2024. Ernest, affectionately known as Ernie—and to some as Tommy—leaves behind a legacy of love and perseverance, embodied by his devoted wife of 70 years, Carmen, and their loving family. Together, they nurtured a life full of warmth and dedication, including their sons Ernie and Larry, daughter Dolores, son-in-law Tommy Salcido, daughters-in-law Carol and Melinda, seven grandchildren, fourteen great-grandchildren and two, soon-to-be three, great-great-grandchildren.
Born in East Los Angeles, Ernie's journey took him from marrying his sweetheart Carmen to moving to South El Monte, CA, where they raised their children through their teenage years. At the age of 39 and with the encouragement of their friends, the Casillas family, in a bold move fueled by dreams and determination, Ernie transitioned from his job to embark on an entrepreneurial adventure, relocating the family to Miami, AZ in 1973. There, he opened the first of what would become three beloved La Luz del Dia Bakeries in Miami, Globe, and Superior. Despite having no prior experience in running a business or baking, Ernie's fearless spirit and innovative mind led him to create a thriving enterprise from scratch—literally and figuratively.
The family eventually focused their efforts on the Globe location, transforming the bakery into a café that became a community staple for 50 years. This endeavor was not just a business but a family affair, with Dolores joining Carmen by her side from the age of 16. The café was a true labor of love, involving nearly every family member and close friends, all of whom were considered family by Ernie. In 2011, Ernie and Carmen passed the torch to Dolores, who ran it until she retired and they sold the business this past January 2024.
Ernie's infectious laugh, warm bear hugs, and firm handshakes became his trademarks, leaving indelible marks on the hearts of those he met. His legacy of courage, love, and family unity will continue to live on in the stories shared by his family and the community he helped build. Ernie will be profoundly missed but remembered fondly and lovingly by all who had the pleasure of knowing him.
